16 wedges of fresh tomato (cut small enough to fit the bread or cracker)
1 ball of fresh mozzarella (8 to10 ounces), cut into 16 pieces, or 16 bocconcini (bite-sized mozzarella balls)
16 fresh basil leaves
long barbecue forks or skewers
Directions
Arrange the mozzarella, tomatoes, basil leaves, and grilled bread or crackers in bowls or on a platter.
Preheat the grill to high. When the flame or coals are good an hot, the fun can begin!
Skewer a cube of mozzarella and roast it over the flame, turning the skewer to evenly melt and brown the cheese. Use a knife or fork to carefully scrape the cheese off the skewer onto the bread or cracker. Top the cheese with a basil leaf and a piece of tomato and place a second piece of grilled bread on top. Enjoy!
